I have always cooked salmon on a charcoal grill with a cedar plank. I get the plank (Western red cedar) warmed up in the grill prior to setting fillet on it. Cook salmon on the plank until almost done, then brush maple on it and slide over the coals. Let cedar flame up and turn black for a minute then choke out fire. You can experiment with your own seasonings to go with the maple. I personally use a small amount of standard fish seasoning sprinkled on prior to grilling.

It is delicious!

That sounds amazing!!! I had some cedar planks but didn’t realize I was supposed to actually put them directly on the coals. Interesting. I will try this!
